Method of Making Pickled Long Beans

First step: boil water with Sichuan pepper corn and salt. Then, cool it. Next cleansing long beans, cut them into pieces (you could pickle them without cutting off if earthen jar is big enough), and dry them totally.

Second step: clean and dry the earthen jar, then, put the Sichuan pepper corn salt water and long beans into the earthen jar. Make sure that water swallows long beans but should not be too full of the jar. Try to fill water to three quarters of the earthen jar. Then, add a little of white spirit of high degree. You can add some dried pepper if you like it. In the end, seal up the jar by pouring some clear water in the mouth of the jar.

After the long beans pickled well, you can put some sliced meat and garlic in long beans when fry it. There is a tip for you that in summer the pickling time should be shorter, or it will be easily go bad.
