Zhangjiajie Tujia Bull Head Feast

Have you ever had a whole bull head with groups of people outdoors? Bull Head Feast is one of the most famous and traditional feast of Tujia people.Bull Head Feast in Tujia can trace back to thousand years ago.It is said to be the chieftain who was in charge of Tujia people and ruled the army to fight against enemies.In order to encourage soldiers vitality and confidence,the chieftain treated all the soldiers with big bull heads,which embody Tujia people’s ambition and courage.Since the soldiers had the bull head feast together,they always won the battles and drove out the enemies.Though there is no clear written documents about bull head feast,oral stories about it have past from generation to generation.Whenever Tujia people host significant ceremonies,Tujia Bull Head Feasts are necessary.

The detail procedures of making the bull head feast are as follows.The first step is to offer a whole bull head and clean it then put it into a big boiler.The second step is to control the temperature and boiling time of cooking in that each parts of the bull head needs different heats.As to the taste,many ordinary ingredients are indispensable;they are red soak peppers,sour meats,smoked pork and stuffed buns covered with sagebrushes.
