As we all know, Miao people are fond of acid foods, which makes sour soup centuried and tailor-made. Generally speaking, many kinds of sour soup can be found in Miao nationality. Here, I will mainly focus on one.
Firstly, pour some boiling rice water into a prepared potiche or jar. Sometimes, you can add a little cereal, and defined amount of litsea to freshen the palate. Then, head up the jar and wait approximately 3 days’ fermentation. Later, you can add some rice water or tofu water into this jar at any time.
Sour soup can not only quench one’s thirst, but also relieve heat, refresh and whet one’s appetite, especially in hot summer day. In addition, various kinds of dishes can be cooked based on sour soup, such as fish in sour soup, chicken in sour soup and so on. In recent years, Miao acid foods have succeeded in walking out of Miao valley, gradually become a special cultural landscape even in many big and medium sized cities and welcomed by more and more people.
